L'Hostellerie Cèdre & Spa overlooks the ramparts of Beaune, just a few minutes’ walk from the Hospices. Its façade, that of a 19th-century winegrower’s mansion, goes almost unnoticed on Boulevard Maréchal Foch. You have to push open the gate to understand what lies behind: a garden planted with century-old trees, a fountain surrounded by a few tables, and that enormous cedar tree that has given the house its name since 1876.

Amaury Rostagnat, an entrepreneur from Lyon, took over the property in 2019. The challenge was to restore the charm to an address that lacked it, without erasing what remained raw and old. The adjoining lounges of the restaurant have kept their moldings and original parquet flooring. The rest was redesigned by architect Marie Courdouan.

The 40 rooms and suites, including nine Junior Suites, play on the same harmonies of blue and lilac, thick carpeting, understated contemporary furniture. Floor space ranges from 24 to 50 square meters depending on the category. Nespresso machine, Marshall speaker, Maison Caulières welcome products: every bathroom features the same thoughtful touches. Garden side, the silence is complete. Street side, it is better to request a room facing the back: the double glazing, a little dated on this façade, sometimes lets through the noise of a car passing late at night.

On the ground floor, the The Library lounge bar brings together a fireplace, a library, a piano and a billiards table. People go downstairs for afternoon tea. They come back up for a final drink late in the evening before heading to their room.

The Clos du Cèdre restaurant is located in the adjoining manor house, between wood paneling and period parquet flooring, with a terrace for fine weather. Chef Jordan Billan earned a Michelin star there in March 2022. The menu changes with the seasons and highlights local producers; the cellar holds several hundred Burgundy wine labels. On some evenings, guests prefer La Table Gourmande, open from Friday to Tuesday, for simpler, less ceremonial cuisine.

In the basement, in an old vaulted stone cellar, the Nuxe Spa offers three treatment rooms, a hammam and a private jacuzzi. The signature treatment draws inspiration from the potions compounded in the 15th century at the Hôtel-Dieu Apothecary, just a stone’s throw away.

In the morning, breakfast is served on the garden terrace or in the room. Homemade jams, warm pastries, local products. Several guests leave convinced they had one of the best hotel breakfasts of their stay in France.

To head out along the vineyard roads, the hotel lends Moustache electric-assist bicycles. The underground parking lot, secure and equipped with Tesla and Porsche charging stations, remains paid and has limited spaces: it is better to reserve yours at the same time as the room, especially during the harvest season or the Trois Glorieuses weekend.

At the concierge desk, awarded the Clefs d'Or distinction (a first in Burgundy), you can usually find a table at a wine estate or a place for lunch while the room is being prepared.

One last detail: if you arrive early in the afternoon, head to the garden. A coffee on the terrace near the fountain makes the wait effortless.
